I started making fresh sourdough after going through major burnout from my previous business as an online business strategist. The stress was overwhelming, and I'd wake up in the middle of the night unable to fall back asleep.
Instead of lying there anxious, I started watching cooking videos. One night, I came across Nancy Silverton (of the famous La Brea Bakery) making the most incredible grilled cheese sandwich on sourdough. The golden, crispy crust. The way it pulled apart. I had to make it.
After that, instead of scrolling through videos at 3am, I went into the kitchen and just started baking. Loaf after loaf until I nailed it and made that perfect grilled cheese.
I was baking so much that we couldn't possibly eat it all, so I'd gift loaves to friends and neighbors. They loved it so much they started offering money to ensure they had their own fresh loaf every week.
That's how our first bread subscription started. Baking loaves for local families so they didn't have to buy store-bought bread ever again. Bread turned into focaccia, which turned into bagels, which turned into all kinds of sourdough-based treats: cakes, pancakes, cookies, pasta, and even sourdough dog treats.
What started as a remedy for sleepless nights became my life's work. Hundreds of loaves later, I've learned that great bread isn't rushed. It's about patience, intuition, and respecting the process. And it's about bringing real, nourishing food back to our community.
